Know Your Beef

Our cattle are raised on the Hills and Plains of Oklahoma and Kansas and are done so under Beef Quality Assurance Certification (BQA). This means that all of our cattle are cared for and handled in the most humane manner, even down to the back scratches they receive.They are also USDA Certified All-Natural and NHTC Certified which means they will have never received any antibiotics, hormones, or steroids.
All of our cattle are raised on the native grasses and crops in our area and are finished on a locally milled sorghum grain based diet, for 120 days, that is NON-GMO and GLUTEN FREE. The sorghum grain diet gives an additional flavor of sweetness to our beef that is complemented by the robust beef flavor derived from our 30 day dry aging process.
Our USDA Inspected Butcher dry ages our beef for 30 days, the THE SWEET SPOT. In a sterile and carefully controlled temperature, humidity, and air-flow environment, the flavor and tenderness is maximized with a flavor best described as a mix of buttery popcorn and sweetened rare roast beef.
